Stuffed Dover Filet of Soul recipe by Berna
1 cup bread crumbs, 1/2 cup parmesan cheese, 1 egg,
3/4 cup water, 1/4 cup olive oil, salt and pepper - mix all these ingredients until you have a good consistency add more water if you need to; it should feel like oatmeal not too loose not too firm; wash filet of sole and put stuffing in the middle and roll them up! Add fresh dill, lemon juice and paprika and a sprinkle of olive oil on top; I broil them for 5-10 minutes at a high broil.

CARMELIZED FRENCH ENDIVE DISH
6 endives cut lengthwise, 2 apples sliced (any kind of apples), about 25 grapes, rosemary, light butter

Fall Creation Prawns NEW RECIPE

1 pound prawns
1/2 cup peach preserves or peach jam
1 package butternut squash (you can buy in Produce Dept)
1/2 cup slivered almonds, a dash of rum, 1 tsp Cayenne Pepper, salt, pepper, 1/2 tsp paprika, 1/4 cup olive oil, dash of RUM- Put olive oil in pan and add butternut squash and shrimp; add all other seasonings and almonds and a dash of RUM and cook till you can see the white of the shrimp (about 10 minutes). This is a lovely fall dish and so delicious the apricot jam makes it sweet!

RECIPE:
2 Boxes Dry Lasagna Noodles
1 Large Container of Ricotta Cheese
1 cup mozzarella cheese
1 cup Parmesan/Romano or 4 Cheese Shredded Cheese
1 Egg
¼ cup of Bread Crumbs
1 small bag of chopped frozen spinach (thawed for at least half hour so not frozen solid)
Mix all the above in a big bowl stir until well blended
Boil water and make the noodles al dente, drain, cool and layer in this way:
Noodles; ricotta and spinach mixture, grated cheese, mozzarella cheese
and keep layering for at least 5 or 6 layers.
-- Bake in a baking dish with sauce for approximately ½ hr at 350 degrees or until cheese starts to melt

1 Pound Chopped Meat of any kind, a few sprigs of fresh basil
½ cup olive oil, ½ cup any red wine, salt, pepper

1 Large Can of Tomato Sauce – 13 oz.
3 small cans of diced tomatoes 14.5 oz.

FETTUCCINE ALFREDO RECIPE BY EMERIL
1 pound dried fettucine
- 6 tablespoons unsalted butter
- 1 cup heavy cream
- 1 cup finely grated Parmigiano-Reggiano
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- Fresh parsley, for garnish, optional
Directions Cook the fettucine in a pot of rapidly boiling salted water until al dente. Drain in a colander, reserving 1/4 cup of the pasta cooking liquid.
While the pasta is cooking, melt the butter in a medium saucepan over medium-high heat. Add heavy cream and bring to a boil. Cook until sauce has reduced slightly, about 5 minutes. Remove from the heat.
Return the pasta to the pot it was cooked in, set over medium-high heat along with the reserved cooking liquid. Add the butter-cream mixture and half of the Parmesan and toss to combine thoroughly. Season with salt and pepper, to taste. Sprinkle with remaining Parmesan and garnish with parsley, if desired. Serve immediately
Berna's Large Bay Scallops Recipe

JOY OF COOKING CLASSIC CHOCOLATE CHIP COOKIES
Preheat oven to 375 degrees. Line cookie sheets with tin foil. 1 cup plus 2 tablespoons all purpose flour; 1/2 teaspoon baking soda; 1 stick unsalted butter (melted); 1/2 cup sugar; 1/2 cup light brown sugar; 1 large egg; 1/4 teaspoon salt; 1 1/2 tsp. vanilla; 1 cup chocolate chips
MIX all ingredients together till mixed well and drop by teaspoonfuls on cookie sheet with enough space in between each drop full. Cook 8-10 minutes until they start to get golden brown. Cool.

1 Can 16 oz Refried Beans; 1 Tbsp. Taco Seasoning Mix; 1 CUP Sour Cream; 1 cup any kind Salsa; 1 Cup Shredded lettuce; 1 Cup Mexican Shredded Cheese; 2 Tbsp. Black Sliced Olives; Tortilla Chips
Mix beans and seasoning mix in bottom of pie plate or casserole plate; spread out in bottom of dish TOP with all remaining ingredients except chips. Refrigerate at least 3 hours before serving. REALLY DELISH!

Asparagus Cooked over Lettuce
In saucepan add a swirl of olive oil and terriyaki sauce; s&p; add some lettuce leaves - I use Romaine lettuce or hearts of lettuce; cook lightly - then add the asparagus tips and cook with 1/4 cup of water added till just crisp. Add a swirl of lemon pepper seasoning on top; you can also add a swirl of red or white wine while cooking - don't overcook! ENJOY these beauties!
STUFFED TOMATOES BY GRANDMA
Get some nice ROUND tomatoes; cut off tops / dig out some pulp just about 1/4 inch around; in dish mix 1 cup bread crumbs; 1/2 cup water, 1 cup cheddar or any kind of shredded cheese; 1/2 cup olive oil; swirl of soy sauce and 1 egg - mix till stuffing is moist - place stuffing inside of tomato just on top bake at 350 for 20 minutes or until lightly browned and tomato easy to slide fork in. Swordfish with Anise
In fry pan put olive oil (swirl around pan) 1/2 stick butter, 1 cup white wine, 1/2 squeezed lemon, salt and pepper and delicious anise that you can purchase in your produce department of any grocery store. Cook until anise is soft.
Place swordfish in pan and cook on each side until lightly white. Then place the fish in oven directly to broil until slightly brown on top about 10 minutes. Delicious fish and very light!

Turkey Breast Strips in Heavy Cream
Cooked in a Wok
Cook in wok or frying pan. Swirl olive oil around pan, add chopped celery and carrots cook until soft, add turkey breast fresh strips, salt, pepper, 1/2 cup white wine, 1 cup heavy cream and cook till white. Easy and delish!

I prepared this for the Bank of the West's Holiday Dinner

- 1/8 teaspoon Tabasco sauce

After 30 minutes set the cover ajar and keep the pan on low and toss the meat around Cook for another 30 minutes. Pork Chops in Buttermilk BATTER
1 cup buttermilk, 2 eggs beaten, bread crumbs, vegetable oil
Mix buttermilk, eggs dip pork chop in batter then add bread crumbs, fry in veg. oil until done. I added some basil leaves in pan while the pork is frying for flavor.
I buy lemon curd, serve on the side and you can dip the pork chop in before eating - gives it a nice tangy flavor.

1 package yellow cake mix
1 5.9 ounce pkg instant chocolate pudding
4 eggs beaten
2/3 cup vegetable oil
2/3 cup white sugar
1/3 cup water
1 8 oz container sour cream
1 cup semisweet chocolate chips
Preheat oven to 350 degrees
grease and flour a baking pan (I use flour and PAM BAKING SPRAY)
In a bowl hand mix all the above cook 55 minutes or until done, until top springs back
The drizzle I make to pour on top is
1 box Powdered Sugar
1 tsp. vanilla
1/2 stick of butter, 1/4 cup of milk
3 tablespoons sour cream
Mix with a mixer until smooth and drizzle on top

Pork Chops in Buttermilk BATTER
1 cup buttermilk, 2 eggs beaten, bread crumbs, vegetable oil
Mix buttermilk, eggs dip pork chop in batter then add bread crumbs, fry in veg. oil until done. I added some basil leaves in pan while the pork is frying for flavor.
I buy lemon curd, serve on the side and you can dip the pork chop in before eating - gives it a nice tangy flavor.

Topping: 1 cup brown sugar, 1 cup chopped pecans, 1/3 cup flour, 1/3 cup butter melted
Mix first 6 ingredients and place in baking dish. For topping, mix brown sugar and flour until it is blended then add pecans. Spread over the top of the sweet potato mixture. Drizzle melted butter over topping and bake 350 until set 30-45 min

To Make Italiano Sauce Homemade:
Ingredients:
12 Roma or Plum Tomatoes, 1/2 White Onion, 1 Can chopped tomatoes
2 Basil Leaves
Olive Oil
Salt, Pepper, Italian Seasonings
This is a Marinara Sauce meaning no meat in the sauce
Pour all around the pan some olive oil around the bottom of a lidded pot
Chop by hand the tomatoes and onion
After oil is heated, add the chopped tomatoes & onion, add salt, pepper and basil leaves. Mix in some Italian ingredients you can use it by spices in a jar or squeezable Italian seasonings you can buy in any grocery store, add canned chopped tomatoes.
Stir, cover and simmer for 35 minutes until fragrant.

Fry the chopped meat in pan with olive oil and wine till brown.
When cool, mix the meat with w/ bread crumbs, egg, s&p, parmesan cheese and rice. Mix well, Stuff the peppers after cutting tops off and cleaning the inside of pepper - take the top you cut off and make a piece to fit on top the stuffed pepper to hold stuffing in lightly. Put some wine in bottom of a frying pan with olive oil and add the peppers, top with one can tomato sauce, cook for about 45 minutes covered or until you can place a fork easily inside the pepper - so that the fork goes through easily.
Green Bean Casserole
1 Can CAMPBELL's Cream of Mushroom Soup
3/4 cup milk
1/8 tsp black pepper
1 1/3 cup French's Fried Onions
2 cans green beans drained
Mix soup and milk add pepper, beans and 2/3 cup French's Onions in casserole dish
Bake at 350 degrees for 30 minutes or until Hot
STIR TOP with Remaining Mushrooms

Very quick and delish!

60 Nilla Wafers Finally Chopped (I use food processor)
1/3 cup butter melted, 1 Pkg Philadelphia Cream Cheese, 1/4 cup sugar, 3 1/4 cups
milk, divided
1 Tub (8 oz) COOL WHIP
2 pkg 3.4 oz each Instant Vanilla JELLO-Pudding
1/2 cup caramel ice cream topping, glazed walnuts for top of cake
Mix wafer crumbs and butter, press into bottom of 13x9 baking pan
Beat cream cheese, sugar and 1/4 cup of milk with electric mixer till blended
Stir in 1 Cup Cool Whip; spread over the crust
Beat pudding mixes and remaining milk with whisk stir in 1/4 cup caramel topping. Spoon over cream cheese layer, top with remaining cool whip.
REFRIGERATE for 5 hours or until firm. Top with nuts (you can also top with apples)
